Homemade Pizza about 1/4 the cost of buying it- and Gooood
2 large pizzas
The Dough- Start with 1 2/3 cup tap water in the microwave for 55 seconds. Stir in 2 1/4 tbsp yeast and 3 tbsp sugar and set it aside. In a mixing bowl - 4c bread flour (works much better than all purpose), 1tsp salt, 1/4c olive oil and stir. Combine the wet with the dry and work it for 5 minutes. If it becomes too sticky, add a little flour. Cover with a damp towel for 1 hour, punch it down and cover for 45 minutes. You can use it now or its even better if you tightly bag in and refrigerate for a few days, just be sure to let it come to room temp before trying to roll it.
Preheat the oven to 475
The Sauce- I use 4 soup ladle's in a bowl (2 on each pizza), 1 tbsp brown sugar, 3 cloves crushed garlic, 1 tsp dry Italian seasoning- just stir it- no need to precook.
Roll out the dough with a little flour on the table to keep from sticking. Sprinkle some cornmeal on a thick steel pan ( the aluminum ones with the holes did not work for me). Curl the edges over to make a crust. 2 ladle's of sauce, mozzarella or pizza blend, and the toppings of your choice.
Cook only 1 pizza at a time on the center rack for about 13 minutes.
